
Exotic Midnight Mexican Pasta

Ingredients:
- 200 grams Fettuccine Pasta
- 2 tablespoons Olive Oil
- 2 cloves Garlic
- 1 medium Onion
- 2 medium Tomatoes
- 2 teaspoons Mexican Chili powder
- 1 teaspoon Cumin
- 1 bunch Cilantro
- 1 small Lime
- 1 cup Mozzarella Cheese
Instructions:
- Fill a large pot with water and bring it to a boil. Add a pinch of salt and the fettuccine pasta. Cook until al dente, then drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and chopped onion, cook until fragrant and golden.
- Add chopped tomatoes to the skillet, along with the Mexican chili powder, and cumin. Stir well to combine and cook until tomatoes are soft.
- Add the cooked pasta into the skillet and toss until the pasta is evenly coated with the tomato mixture.
- Add the chopped cilantro and squeeze the lime over the pasta. Toss again to combine.
- Sprinkle the mozzarella cheese over the pasta. Cover the skillet and let it sit for a few minutes until the cheese is melted.
