
Exotic Midnight Mac n' Cheese

Ingredients:
- 2 cups Pasta (Elbow or Macaroni)
- 2 tablespoons Butter
- 2 tablespoons Flour
- 2 cups Milk
- 2 cups Cheddar cheese
- 1/3 cup Gorgonzola cheese
- 4 slices Bacon
- 1 teaspoon Truffle oil
- to taste tablespoons Salt and Pepper
Instructions:
- Cook pasta according to package directions until al dente.
- In a medium-sized saucepan, melt the butter over medium heat. Stir in the flour to create a roux.
- Gradually whisk in the milk, then bring to a simmer and stir regularly until thickened.
- Lower heat and stir in both cheeses until smooth.
- Cook bacon until crisp, then chop into pieces.
- Drain pasta and add to the cheese sauce, along with the bacon. Mix until evenly coated.
- Drizzle with truffle oil and season with salt and pepper to taste.
