Exotic Midnight Fruit Fajitas

Ingredients:

  • 2 whole Peaches
  • 1 whole Mango
  • ¼ whole Pineapple
  • 0.5 whole Red Bell Pepper
  • 4 whole Tortillas
  • 2 tablespoons Olive Oil
  • A handful Cilantro
  • 1 tablespoon Lime Juice
  • to taste Salt
  • to taste Black Pepper

Instructions:

  1. Prepare the fruits and bell pepper: Peel and slice the peaches, mango, and pineapple, and thinly slice the red bell pepper.
  2. In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the sliced fruits and bell pepper to the pan, and sauté for about 5 minutes until they are slightly caramelized.
  3. While the fruits and bell pepper are cooking, warm the tortillas in a dry pan over medium heat for about 30 seconds on each side. Keep them warm in a clean towel.
  4. Adjust the taste of the sautéed fruits and bell pepper with salt and pepper to your liking. Remove from heat, and stir in the handful of cilantro and the tablespoon of lime juice.
  5. To serve, spoon the fruit and bell pepper mixture onto the warm tortillas. Serve them immediately, garnished with extra cilantro, if desired.
