
Exotic Midnight Egg Skillet

Ingredients:
- 4 units Eggs
- 1/2 cup Chorizo sausage
- 1/2 cup Diced red bell pepper
- 1/2 cup Diced yellow onion
- 2 units Minced garlic cloves
- 1 cup Diced potatoes
- 2 tablespoons Olive oil
- 1/2 teaspoon Chili flakes
- to taste Salt and black pepper
- 1 cup Shredded cheddar cheese
Instructions:
- First, heat the olive oil in a large ovenproof skillet over medium heat.
- Next, add the chorizo sausage to the skillet and cook until browned. This should take about 5 minutes.
- Following this, add the diced red bell pepper, yellow onion, minced garlic, and potatoes to the skillet. Cook until the vegetables are soft and the potatoes are golden brown. This will take about 5 more minutes.
- While your mixture is cooking, preheat your oven to 400 degrees Fahrenheit.
- Once your vegetables and chorizo are ready, create four wells in the mixture. Crack an egg into each well and season with salt, pepper, and chili flakes.
- Sprinkle thte shredded cheddar cheese over the mixture and place the skillet in the preheated oven.
- Bake your egg skillet until the egg whites are set but the yolks are still runny. This should take about 7-10 minutes.
- Finally, let your Exotic Midnight Egg Skillet cool for a few minutes before cutting into it, then serve and enjoy your midnight feast.
