Exotic Midnight Chicken Fried Rice

Ingredients:

  • 1 cup Basmati rice
  • 200 grams Boneless chicken
  • 2 tablespoons Olive oil
  • 1 medium Onion
  • 1 medium Bell pepper
  • 0.5 cup Green peas
  • 2 cloves Garlic
  • 2 medium Eggs
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sriracha sauce
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Cook the basmati rice as per the instructions on the pack. Set it aside.
  2. Cut the chicken into small pieces and season with salt and pepper.
  3. Heat oil in a pan, add chopped garlic and onions and sauté till they turn golden brown.
  4. Add the chopped bell pepper and green peas, and sauté for a few minutes.
  5. Move the vegetables to one side of the pan, and on the other side, break the eggs and scramble them.
  6. Add the chicken pieces to the pan and cook until they're done.
  7. Now, combine the rice with the rest of the ingredients in the pan. Stir well to mix.
  8. Pour the soy sauce and Sriracha over the rice. Mix well until everything is well coated.
  9. Cook for a few more minutes. Adjust the seasoning if necessary.
  10. Serve your exotic midnight chicken fried rice piping hot, garnished with chopped spring onions if desired.
