Exotic Mexican Veggie Tacos

Ingredients:

  • 12 pieces Corn Tortillas
  • 4 cups Assorted Vegetables - Bell Peppers, Zucchini, Onion, Sweet Corn
  • 2 tablespoons Olive Oil
  • 1 cup Cactus Paddles (Nopales), cleaned and diced
  • 1 can Black Beans, canned, rinsed and drained
  • 2 cups Mexican Cheese Blend, shredded
  • To taste Salt and Pepper
  • 1 cup Salsa Verde
  • 1 piece Avocado, diced
  • 1 handful Fresh Cilantro, chopped
  • 1 for serving Lime wedges

Instructions:

  1. In a large pan warm the olive oil over medium heat. Add assorted vegetables and nopales, season with salt and pepper. Sauté until they are tender and slightly caramelized.
  2. Mix in the black beans and cook for another 2-3 minutes until they are warm.
  3. Warm the tortillas in a dry skillet over medium-high heat for about 30 seconds on each side.
  4. Assemble the tacos by spooning veggie-bean mixture onto each tortilla. Top with shredded cheese, salsa verde, diced avocado, and fresh cilantro.
  5. Serve with lime wedges on the side for guests to add to their liking. Enjoy your Exotic Mexican Veggie Tacos.
