
Exotic Mexican Veggie Tacos

Ingredients:
- 12 pieces Corn Tortillas
- 4 cups Assorted Vegetables - Bell Peppers, Zucchini, Onion, Sweet Corn
- 2 tablespoons Olive Oil
- 1 cup Cactus Paddles (Nopales), cleaned and diced
- 1 can Black Beans, canned, rinsed and drained
- 2 cups Mexican Cheese Blend, shredded
- To taste Salt and Pepper
- 1 cup Salsa Verde
- 1 piece Avocado, diced
- 1 handful Fresh Cilantro, chopped
- 1 for serving Lime wedges
Instructions:
- In a large pan warm the olive oil over medium heat. Add assorted vegetables and nopales, season with salt and pepper. Sauté until they are tender and slightly caramelized.
- Mix in the black beans and cook for another 2-3 minutes until they are warm.
- Warm the tortillas in a dry skillet over medium-high heat for about 30 seconds on each side.
- Assemble the tacos by spooning veggie-bean mixture onto each tortilla. Top with shredded cheese, salsa verde, diced avocado, and fresh cilantro.
