
Exotic Mexican Vegetable Enchiladas

Ingredients:
- 2 cups Mixed Vegetables
- 1 can Enchilada Sauce
- 8 pieces Flour Tortillas
- 1 cup Grated Cheese
- handful chopped Cilantro
- 1 can Refried beans
- to taste optional Cream
- to serve optional Guacamole
- 1 whole Exotic Ingredient: Chayote (Mexican Squash)
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large pan, sauté the mixed vegetables and chopped chayote until tender.
- Spread a thin layer of enchilada sauce over the bottom of a baking dish.
- Warm the flour tortillas in the oven for a few minutes. Once softened, spread refried beans on each tortilla and fill with the vegetable mixture. Roll up the tortillas and place them in the baking dish.
- Cover the rolled tortillas with the rest of the enchilada sauce and sprinkle the cheese on top.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped cilantro, a drizzle of cream, and a side of guacamole if desired. Serve hot.
