Exotic Mexican Vegetable Enchiladas

Ingredients:

  • 2 cups Mixed Vegetables
  • 1 can Enchilada Sauce
  • 8 pieces Flour Tortillas
  • 1 cup Grated Cheese
  • handful chopped Cilantro
  • 1 can Refried beans
  • to taste optional Cream
  • to serve optional Guacamole
  • 1 whole Exotic Ingredient: Chayote (Mexican Squash)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large pan, sauté the mixed vegetables and chopped chayote until tender.
  3. Spread a thin layer of enchilada sauce over the bottom of a baking dish.
  4. Warm the flour tortillas in the oven for a few minutes. Once softened, spread refried beans on each tortilla and fill with the vegetable mixture. Roll up the tortillas and place them in the baking dish.
  5. Cover the rolled tortillas with the rest of the enchilada sauce and sprinkle the cheese on top.
  6. Bake for 20 minutes, or until the cheese is melted and bubbly.
  7. Garnish with chopped cilantro, a drizzle of cream, and a side of guacamole if desired. Serve hot.
