
Exotic Mexican Street Corn Salad

Ingredients:
- 4 ears Fresh Corn
- 0.25 cup Mayonnaise
- 0.5 cup Queso Fresco (Mexican Cheese)
- 1 whole Lime
- 0.25 cup Cilantro
- 1 teaspoon Chilli Powder
- to taste - Salt
- to taste - Pepper
Instructions:
- Preheat your grill, high heat (or use your stovetop if you don't have a grill).
- Remove the husks from the corn and grill until nicely charred all around, then remove from the grill and let it cool enough to handle.
- Using a small bowl upside-down inside a large bowl, cut the corn off the cob.
- To the large bowl, add mayonnaise, cheese, juice from the lime, chopped cilantro, chilli powder, salt, and pepper. Toss everything to combine.
- Serve at room temperature with lime wedges and additional cheese and cilantro on top. Enjoy the exotic Mexican street corn salad as a scrumptious snack!
