Exotic Mexican Street Corn Salad

Ingredients:

  • 4 ears Fresh Corn
  • 0.25 cup Mayonnaise
  • 0.5 cup Queso Fresco (Mexican Cheese)
  • 1 whole Lime
  • 0.25 cup Cilantro
  • 1 teaspoon Chilli Powder
  • to taste - Salt
  • to taste - Pepper

Instructions:

  1. Preheat your grill, high heat (or use your stovetop if you don't have a grill).
  2. Remove the husks from the corn and grill until nicely charred all around, then remove from the grill and let it cool enough to handle.
  3. Using a small bowl upside-down inside a large bowl, cut the corn off the cob.
  4. To the large bowl, add mayonnaise, cheese, juice from the lime, chopped cilantro, chilli powder, salt, and pepper. Toss everything to combine.
  5. Serve at room temperature with lime wedges and additional cheese and cilantro on top. Enjoy the exotic Mexican street corn salad as a scrumptious snack!
