
Exotic Mexican Shrimp Pibil

Ingredients:
- 2 pound Shrimp
- 3 tablespoons Achiote paste
- 1 cup Orange juice
- 0.5 cup Lime juice
- 1 units Habanero pepper
- 1 unit White onion
- 3 units Garlic cloves
- 0.5 units Cilantro bunch
- 2 units Banana leaves
- 1 teaspoon Salt
- 12 units Corn tortillas
- 2 units Avocado
Instructions:
- In a large bowl, dissolve achiote paste in orange and lime juice.
- Chop habanero pepper, onion, garlic and cilantro finely, then mix together. Add this mixture to the bowl with the achiote paste.
- Add shrimp to the bowl, mix well and marinate for 15 minutes.
- Preheat your oven to 375F (190C).
- While the shrimp is marinating, rinse and pat dry the banana leaves. Line an oven-safe dish with the banana leaves, leaving some overhang.
- Pour the shrimp and marinade over the banana leaves. Fold overhang of the leaves on top of shrimp to make a packet. You can secure the packet with kitchen twine if needed.
- Bake for 45 minutes, until shrimp is pink and cooked through.
- Warm up the corn tortillas, slice the avocados.
- Serve the shrimp pibil in the banana leaves, garnished with avocado slices. Use corn tortillas to scoop up the shrimp.
