
Exotic Mexican Scrambled Eggs

Ingredients:
- 4 unit Eggs
- 2 teaspoons Taco seasoning
- 0.5 cup Chorizo
- 0.5 cup Refried beans
- 2 unit Roma tomatoes
- 1 unit Avocado
- to taste unit Fresh cilantro
- to taste unit Cheddar cheese
- to taste unit Sour cream
Instructions:
- Cook the chorizo in a non-stick skillet over medium heat until crispy. Remove from the heat and set aside.
- In a mixing bowl, whisk the eggs with the taco seasoning.
- Pour the eggs into the skillet with the chorizo and cook on medium heat until the eggs are scrambled.
- Heat the refried beans in a separate pan or in the microwave.
- Cut the tomatoes and avocado into slices.
- Serve the scrambled eggs with a side of refried beans, topped with cheese, tomatoes, avocado slices, fresh cilantro, and a dollop of sour cream.
