
Exotic Mexican Rice Bowl

Ingredients:
- 2 Cups Long Grain White Rice
- 4 Cups Water
- 2 Tablespoons Olive Oil
- 1 Tablespoon Cumin
- 1 Cup Canned Black Beans
- 1 Cup Fresh Corn Kernels
- 1 Cup Red Bell Pepper
- 1 Cup Pico de Gallo
- 1 Whole Avocado
- 1 Whole Jalapeno
- To Taste Fresh Cilantro
- To Serve Lime Wedges
Instructions:
- In a large saucepan, bring the water to a boil. Stir in the rice, reduce heat, cover, and simmer for 20 minutes.
- While the rice is cooking, heat the olive oil in a skillet over medium heat. Stir in the cumin.
- Add the black beans, corn, and chopped red bell pepper to the skillet. Cook until heated through.
- When rice is done, mix it into the skillet with the vegetables. Top with Pico de Gallo and slices of avocado.
- Remove from heat, and sprinkle with chopped jalapeno. Garnish with fresh cilantro and serve with lime wedges.
