Exotic Mexican Rice Bowl

Ingredients:

  • 2 Cups Long Grain White Rice
  • 4 Cups Water
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Cumin
  • 1 Cup Canned Black Beans
  • 1 Cup Fresh Corn Kernels
  • 1 Cup Red Bell Pepper
  • 1 Cup Pico de Gallo
  • 1 Whole Avocado
  • 1 Whole Jalapeno
  • To Taste Fresh Cilantro
  • To Serve Lime Wedges

Instructions:

  1. In a large saucepan, bring the water to a boil. Stir in the rice, reduce heat, cover, and simmer for 20 minutes.
  2. While the rice is cooking, heat the olive oil in a skillet over medium heat. Stir in the cumin.
  3. Add the black beans, corn, and chopped red bell pepper to the skillet. Cook until heated through.
  4. When rice is done, mix it into the skillet with the vegetables. Top with Pico de Gallo and slices of avocado.
  5. Remove from heat, and sprinkle with chopped jalapeno. Garnish with fresh cilantro and serve with lime wedges.
