Exotic Mexican Pork Tacos

Ingredients:
- 2 pounds Pork shoulder
- 1 whole Orange
- 1 whole Onion
- 2 whole Jalapeno
- 3 whole Garlic cloves
- 1 teaspoon Cumin
- 1 teaspoon Coriander
- 12 whole Soft corn tortillas
- To taste Fresh cilantro
- To garnish Lime wedges
Instructions:
- Cut pork shoulder into large chunks, removing any excess fat.
- Place pork pieces in a large pot and add the orange (quartered), onion (quartered), jalapenos (halved and de-seeded), garlic cloves, cumin, and coriander.
- Cover the ingredients with water and simmer for about 2 hours, or until meat is tender and pulls apart easily.
- Remove the meat and shred it using two forks.
- Warm the tortillas in a dry skillet over medium heat until soft and pliable.
- Serve the shredded pork on the warm tortillas, topped with fresh cilantro. Add a wedge of lime to each taco and encourage your guests or family to squeeze it over the filling before eating.
