Exotic Mexican Pork Tacos

Ingredients:

  • 2 pounds Pork shoulder
  • 1 whole Orange
  • 1 whole Onion
  • 2 whole Jalapeno
  • 3 whole Garlic cloves
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 12 whole Soft corn tortillas
  • To taste Fresh cilantro
  • To garnish Lime wedges

Instructions:

  1. Cut pork shoulder into large chunks, removing any excess fat.
  2. Place pork pieces in a large pot and add the orange (quartered), onion (quartered), jalapenos (halved and de-seeded), garlic cloves, cumin, and coriander.
  3. Cover the ingredients with water and simmer for about 2 hours, or until meat is tender and pulls apart easily.
  4. Remove the meat and shred it using two forks.
  5. Warm the tortillas in a dry skillet over medium heat until soft and pliable.
  6. Serve the shredded pork on the warm tortillas, topped with fresh cilantro. Add a wedge of lime to each taco and encourage your guests or family to squeeze it over the filling before eating.
