
Exotic Mexican Pasta Dinner

Ingredients:
- 8 ounces Pasta
- 2 tablespoons Olive oil
- 2 cloves Garlic
- 1 whole Red bell pepper
- 1 whole Onion
- 14 ounces Black beans
- 1 cup Corn
- 1 whole Jalapeno
- 1 cup Cherry tomatoes
- 1 cup Mexican blend cheese
- 1 bunch Cilantro
- 1 whole Lime
- 1 tablespoon Cajun seasoning
- 1 teaspoon Salt
- 1 teaspoon Black pepper
Instructions:
- Cook the pasta according to the package instructions. Once done, drain and set aside.
- In a large pan, heat the olive oil over medium heat. Add the garlic, chopped onion, and chopped red bell pepper. Saute until the vegetables are tender.
- Stir in the black beans, corn, jalapeno, and cherry tomatoes. Season with cajun seasoning, salt, and black pepper.
- Add the cooked pasta to the pan and stir to combine. Top with the Mexican blend cheese and cover the pan to allow the cheese to melt.
- Remove from heat and garnish the pasta with cilantro leaves and lime wedges before serving.
