
Exotic Mexican Midnight Eggs

Ingredients:
- 4 units Eggs
- 2 tablespoons Olive oil
- 100 grams Chorizo sausage
- 1 unit Red onion
- 1 unit Fresh chili pepper
- 1 unit Avocado
- 6 units Cherry Tomatoes
- to taste bunch Fresh coriander
- to taste Freshly squeezed lime juice
- 4 units Corn tortillas
- 50 grams Mexican cheese
Instructions:
- In a pan, heat the olive oil and sauté the chorizo until it starts to crisp.
- Dice the onion and chili pepper, add them to the pan and cook until they start to soften.
- Crack the eggs into the pan, stirring gently so not to scramble them. Let them cook on a low heat.
- Meanwhile, slice the avocado, halve the cherry tomatoes and chop the coriander.
- Warm the tortillas in a dry skillet until they are soft and pliable.
- Squeeze lime juice on the avocado slices to prevent them from browning.
- Divide the egg mix between the warm tortillas, adding the avocado slices, tomatoes, and a sprinkle of cheese on top. Garnish with fresh coriander.
