Exotic Mexican Fruit Salsa with Grilled Chicken

Ingredients:

  • 4 pieces Boneless chicken breasts
  • 2 tablespoons Olive oil
  • to taste Salt
  • to taste Black pepper
  • 1 large Mango
  • 1/2 Pineapple
  • 2 pieces Kiwi
  • 1 piece Jalapeno
  • 1/2 Red onion
  • handful Cilantro
  • 1 piece Lime

Instructions:

  1. Preheat a grill over medium-high heat.
  2. Drizzle chicken with olive oil and season with salt and pepper, then grill until cooked through, 6-8 minutes per side.
  3. While the chicken is cooking, prepare the salsa. Dice the mango, pineapple, kiwi, jalapeno, and red onion. Mix together in a bowl.
  4. Chop the cilantro and add to the bowl.
  5. Cut the lime in half and squeeze the juice over the salsa. Stir well.
  6. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.
  7. Serve the grilled chicken with the fruit salsa on top. Enjoy your exotic taste of Mexico!
