Exotic Mexican Egg Tacos

Ingredients:

  • 8 Eggs
  • 12 Corn Tortillas
  • 1 cup Chorizo (optional)
  • 1 cup Queso Fresco cheese
  • 1 cup Refried black beans
  • 1 Avocado, sliced
  • to taste Fresh cilantro
  • to taste Salsa Roja
  • to taste Lime wedges

Instructions:

  1. Beat the eggs in a bowl and set aside.
  2. In a large skillet over medium heat, cook the chorizo, breaking it up with a spoon, until it is crumbled and browned.
  3. Push the chorizo to one side of the skillet. Pour the beaten eggs into the free space in the skillet.
  4. Cook the eggs, stirring occasionally, until they are done the way you like them.
  5. Spread the refried beans on the warmed tortillas.
  6. Top the beans with the scrambled eggs and chorizo.
  7. Sprinkle a generous amount of queso fresco over the eggs and chorizo.
  8. Add the slices of avocado on top.
  9. Garnish with fresh cilantro and salsa roja.
  10. Serve immediately, with lime wedges on the side for squeezing.
