
Exotic Mexican Egg Tacos

Ingredients:
- 8 Eggs
- 12 Corn Tortillas
- 1 cup Chorizo (optional)
- 1 cup Queso Fresco cheese
- 1 cup Refried black beans
- 1 Avocado, sliced
- to taste Fresh cilantro
- to taste Salsa Roja
- to taste Lime wedges
Instructions:
- Beat the eggs in a bowl and set aside.
- In a large skillet over medium heat, cook the chorizo, breaking it up with a spoon, until it is crumbled and browned.
- Push the chorizo to one side of the skillet. Pour the beaten eggs into the free space in the skillet.
- Cook the eggs, stirring occasionally, until they are done the way you like them.
- Spread the refried beans on the warmed tortillas.
- Top the beans with the scrambled eggs and chorizo.
- Sprinkle a generous amount of queso fresco over the eggs and chorizo.
- Add the slices of avocado on top.
- Garnish with fresh cilantro and salsa roja.
- Serve immediately, with lime wedges on the side for squeezing.
