
Exotic Mexican Chicken Breakfast Tacos

Ingredients:
- 2 Boneless Chicken Breasts
- 1 packet Taco Seasoning
- 8 Corn Tortillas
- 2 tablespoons Cooking Oil
- 8 Eggs
- 1.5 cups Black Beans
- 0.5 cup Queso Fresco
- 1 cup Avocado Slices
- 1 tablespoon Chopped Cilantro
- To Taste Jalapenos, Fresh or Pickled
- To Taste Chipotle Sauce
Instructions:
- Season chicken breasts with the taco seasoning. Grill chicken until fully cooked, then shred. Set aside.
- Warm the cooking oil in a large pan. Scramble the eggs in the pan until cooked to your liking. Set the scrambled eggs aside.
- In the same pan, warm the black beans and smash them a little to create a bean spread. Heat the corn tortillas in the pan as well.
- Stack the tacos starting with the beans spread, followed by the scrambled eggs, shredded chicken, crumbled queso fresco, avocado slices, and finally top it with chopped cilantro, jalapenos, and chipotle sauce.
