Exotic Mexican Chicken

Ingredients:

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red chili flakes
  • 2 pieces garlic cloves
  • 2 peppers chipotle peppers in adobo sauce
  • 1 cup orange juice
  • 1/2 cup lime juice
  • 1/2 cup cilantro
  • 1 piece avocado
  • 12 pieces corn tortillas

Instructions:

  1. Season the chicken with salt, pepper, and red chili flakes.
  2. Heat the olive oil in a pan over medium heat. Add the chicken and cook until golden, about 5-7 minutes each side.
  3. While the chicken is cooking, blend the garlic, chipotle peppers, orange and lime juice in a blender until smooth.
  4. Pour the sauce over the chicken and let it simmer for about 20 minutes or until the chicken is cooked through.
  5. Chop the cilantro and slice the avocado.
  6. Warm the tortillas in a dry pan over medium heat.
  7. Serve the chicken on the tortillas, garnished with cilantro and slices of avocado.
