Exotic Mexican Cactus Salad

Ingredients:

  • 4 pcs Nopales (Cactus Paddles)
  • 2 pcs Tomatoes
  • 1 pcs Red Onion
  • 1 pcs Jalapeno Pepper
  • 1/2 cup Cilantro
  • 1 pcs Lime
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 2 tbsp Olive oil

Instructions:

  1. Clean the cactus paddles, removing the thorns and outer edges, then dice into small pieces.
  2. Boil the cactus in a pot of water for about 10 minutes, until tender. Drain and rinse to remove the sliminess.
  3. Chop the tomatoes, onion, jalapeno, and cilantro.
  4. In a large bowl, mix together the cactus, tomato, onion, jalapeno, and cilantro.
  5. Squeeze the lime over the salad, then add the salt, pepper, and olive oil.
  6. Toss well to combine, then refrigerate for at least 1 hour before serving.
