
Exotic Mexican Cactus Salad

Ingredients:
- 4 pcs Nopales (Cactus Paddles)
- 2 pcs Tomatoes
- 1 pcs Red Onion
- 1 pcs Jalapeno Pepper
- 1/2 cup Cilantro
- 1 pcs Lime
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 2 tbsp Olive oil
Instructions:
- Clean the cactus paddles, removing the thorns and outer edges, then dice into small pieces.
- Boil the cactus in a pot of water for about 10 minutes, until tender. Drain and rinse to remove the sliminess.
- Chop the tomatoes, onion, jalapeno, and cilantro.
- In a large bowl, mix together the cactus, tomato, onion, jalapeno, and cilantro.
- Squeeze the lime over the salad, then add the salt, pepper, and olive oil.
- Toss well to combine, then refrigerate for at least 1 hour before serving.
