
Exotic Mexican Breakfast Veggie Tacos

Ingredients:
- 3 cups chopped Assorted vegetables (bell peppers, zucchini, sweet corn)
- 2 tablespoons Olive oil
- 1 teaspoon Cumin
- 1 teaspoon Smoked paprika
- 2 peppers Habanero peppers
- 8 tortillas Corn tortillas
- 1 large Avocado
- 1/4 cup Cilantro
- 1 lime Lime
- to taste Salt
- to taste Black pepper
Instructions:
- 1. In a large skillet, heat the olive oil over medium-high heat.
- 2. Add the chopped vegetables and habanero peppers to the skillet. Saute until the vegetables are tender and slightly caramelized.
- 3. Add the cumin and smoked paprika to the vegetable mixture. Stir well to combine.
- 4. Season the vegetable mixture with salt and black pepper to taste.
- 5. Warm the corn tortillas in a dry skillet or directly over the flame of your gas stove until soft and pliable.
- 6. Mash the avocado in a small bowl and add the juice of the lime and chopped cilantro. Season with salt and pepper.
- 7. To assemble the tacos, spread the avocado mixture on each tortilla and top with the vegetable mixture.
- 8. Garnish your tacos with extra cilantro and a squeeze of fresh lime juice if desired.
