Exotic Mexican Breakfast Veggie Tacos

Ingredients:

  • 3 cups chopped Assorted vegetables (bell peppers, zucchini, sweet corn)
  • 2 tablespoons Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked paprika
  • 2 peppers Habanero peppers
  • 8 tortillas Corn tortillas
  • 1 large Avocado
  • 1/4 cup Cilantro
  • 1 lime Lime
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. 1. In a large skillet, heat the olive oil over medium-high heat.
  2. 2. Add the chopped vegetables and habanero peppers to the skillet. Saute until the vegetables are tender and slightly caramelized.
  3. 3. Add the cumin and smoked paprika to the vegetable mixture. Stir well to combine.
  4. 4. Season the vegetable mixture with salt and black pepper to taste.
  5. 5. Warm the corn tortillas in a dry skillet or directly over the flame of your gas stove until soft and pliable.
  6. 6. Mash the avocado in a small bowl and add the juice of the lime and chopped cilantro. Season with salt and pepper.
  7. 7. To assemble the tacos, spread the avocado mixture on each tortilla and top with the vegetable mixture.
  8. 8. Garnish your tacos with extra cilantro and a squeeze of fresh lime juice if desired.
