Exotic Mexican Beef Taco

Ingredients:
- 1 lb Beef
- 12 Taco shells
- 2 Chipotle peppers
- 1 large Red onions
- 1/4 cup chopped Cilantro
- 1 Lime
- 2 Avocado
- 1/2 cup grated Cotija Cheese
Instructions:
- In a pan, sear the beef until browned, then add the chopped chipotle peppers. Cook on low heat until the beef is tender and the flavors are well combined.
- While the beef cooks, prepare the toppings: dice the red onion, chop the cilantro, slice the lime, and cut the avocados into small cubes. Set aside.
- When the beef is ready, assemble the tacos: start with a taco shell, add some of the beef and chipotle mixture, then top with the onions, cilantro, avocado cubes, and a squeeze of lime.
- Finally, sprinkle the cotija cheese over the top.
