Exotic Mexican beef stuffed peppers

Ingredients:

  • 1 lb Beef, ground
  • 4 units Bell peppers, large red
  • 1/2 cup Onion, chopped
  • 2 units Garlic cloves, minced
  • 1 tbsp Olive oil
  • 1 can Black beans, drained and rinsed
  • 1 cup Cooked mexican rice
  • 1 can Fire-roasted tomatoes, canned
  • 1 cup Shredded Monterey Jack cheese
  • 1 sprig Cilantro for garnish
  • 1 tbsp Mexican spice blend
  • to taste Salt and Pepper

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Slice off the tops of the peppers, remove the seeds and membranes, and rinse thoroughly.
  3. In a large pan, heat the olive oil over medium heat. Add the onion and garlic, cook for 2-3 minutes until they begin to soften.
  4. Add the ground beef to the pan. Break it apart with a wooden spoon. Cook for 6-7 minutes until the beef is browned.
  5. Stir in the Mexican spice blend. Add the fire-roasted tomatoes, cooked rice, and black beans. Cook for another 2-3 minutes until everything is well combined. Season with salt and pepper.
  6. Evenly divide the beef mixture among the bell peppers. Top each pepper with shredded cheese.
  7. Place the stuffed peppers in a baking dish. Bake for 30-35 minutes until the peppers are tender and the cheese is melted and bubbly.
  8. Garnish with fresh cilantro before serving.
