Exotic Mexican beef stuffed peppers

Ingredients:
- 1 lb Beef, ground
- 4 units Bell peppers, large red
- 1/2 cup Onion, chopped
- 2 units Garlic cloves, minced
- 1 tbsp Olive oil
- 1 can Black beans, drained and rinsed
- 1 cup Cooked mexican rice
- 1 can Fire-roasted tomatoes, canned
- 1 cup Shredded Monterey Jack cheese
- 1 sprig Cilantro for garnish
- 1 tbsp Mexican spice blend
- to taste Salt and Pepper
Instructions:
- Preheat the oven to 375°F (190°C).
- Slice off the tops of the peppers, remove the seeds and membranes, and rinse thoroughly.
- In a large pan, heat the olive oil over medium heat. Add the onion and garlic, cook for 2-3 minutes until they begin to soften.
- Add the ground beef to the pan. Break it apart with a wooden spoon. Cook for 6-7 minutes until the beef is browned.
- Stir in the Mexican spice blend. Add the fire-roasted tomatoes, cooked rice, and black beans. Cook for another 2-3 minutes until everything is well combined. Season with salt and pepper.
- Evenly divide the beef mixture among the bell peppers. Top each pepper with shredded cheese.
- Place the stuffed peppers in a baking dish. Bake for 30-35 minutes until the peppers are tender and the cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
