
Exotic Mediterranean Veggie Wrap

Ingredients:
- 4 pieces Whole wheat tortilla wrap
- 1 medium-sized Freshly sliced cucumber
- 2 medium-sized Freshly sliced bell peppers
- 1/2 cup Hummus
- 1/2 cup Feta cheese
- 1 small-sized Red onion slices
- 1/4 cup Kalamata olives
- 1/4 cup Chopped fresh basil
- 2 tablespoons Olive oil
- 1 tablespoon Lemon juice
- to taste Salt
- to taste Pepper
Instructions:
- Spread 2 tablespoons of hummus onto each tortilla wrap.
- Add equal amounts of cucumber, bell peppers, feta cheese, red onion, olives, and basil to each wrap.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Drizzle this dressing over the contents of each wrap.
- Roll up the tortilla wraps tightly, tucking in the sides as you go.
- Cut each wrap in half diagonally, and serve immediately for a crunchy and exotic Mediterranean snack!
