Exotic Mediterranean Veggie Wrap

Ingredients:

  • 4 pieces Whole wheat tortilla wrap
  • 1 medium-sized Freshly sliced cucumber
  • 2 medium-sized Freshly sliced bell peppers
  • 1/2 cup Hummus
  • 1/2 cup Feta cheese
  • 1 small-sized Red onion slices
  • 1/4 cup Kalamata olives
  • 1/4 cup Chopped fresh basil
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice
  • to taste Salt
  • to taste Pepper

Instructions:

  1. Spread 2 tablespoons of hummus onto each tortilla wrap.
  2. Add equal amounts of cucumber, bell peppers, feta cheese, red onion, olives, and basil to each wrap.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Drizzle this dressing over the contents of each wrap.
  4. Roll up the tortilla wraps tightly, tucking in the sides as you go.
  5. Cut each wrap in half diagonally, and serve immediately for a crunchy and exotic Mediterranean snack!
