Exotic Mediterranean Vegetable Tagine

Ingredients:

  • 2 tablespoons Olive oil
  • 1 large Onion
  • 4 pieces Garlic cloves
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Ground turmeric
  • 0.5 teaspoon Ground cinnamon
  • 2 large Carrots
  • 2 medium Zucchini
  • 1 large Red bell pepper
  • 1 can Can of chickpeas
  • 1 can Can of diced tomatoes
  • 250 milliliters Vegetable stock
  • 1 bunch Chopped fresh coriander
  • 100 grams Feta cheese

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and cook until they become translucent.
  2. Stir in the ground cumin, paprika, turmeric, and cinnamon. Cook for about a minute, allowing the spices to toast and release their flavors.
  3. Add the chopped carrots, zucchini, and red bell pepper to the pot along with the drained and rinsed chickpeas. Stir and make sure all ingredients get covered with the spices.
  4. Add the diced tomatoes and vegetable stock to the pot. Bring the mixture to a boil, then reduce to a simmer.
  5. Cover the pot and let it simmer for about an hour, or until the vegetables are tender.
  6. Serve the tagine with fresh coriander and crumbled feta cheese on top.
