Exotic Mediterranean Vegetable Tagine

Ingredients:
- 2 tablespoons Olive oil
- 1 large Onion
- 4 pieces Garlic cloves
- 1 teaspoon Ground cumin
- 1 teaspoon Paprika
- 1 teaspoon Ground turmeric
- 0.5 teaspoon Ground cinnamon
- 2 large Carrots
- 2 medium Zucchini
- 1 large Red bell pepper
- 1 can Can of chickpeas
- 1 can Can of diced tomatoes
- 250 milliliters Vegetable stock
- 1 bunch Chopped fresh coriander
- 100 grams Feta cheese
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and cook until they become translucent.
- Stir in the ground cumin, paprika, turmeric, and cinnamon. Cook for about a minute, allowing the spices to toast and release their flavors.
- Add the chopped carrots, zucchini, and red bell pepper to the pot along with the drained and rinsed chickpeas. Stir and make sure all ingredients get covered with the spices.
- Add the diced tomatoes and vegetable stock to the pot. Bring the mixture to a boil, then reduce to a simmer.
- Cover the pot and let it simmer for about an hour, or until the vegetables are tender.
- Serve the tagine with fresh coriander and crumbled feta cheese on top.
