Exotic Mediterranean Stuffed Bell Peppers

Ingredients:
- 1 cup Arborio rice
- 2 tbsp Olive oil
- 4 Red bell peppers
- 1 Onion, chopped
- 2 Garlic cloves, minced
- 1 Tomato, chopped
- 1 tbsp Fresh basil, chopped
- 1/2 cup Feta cheese, crumbled
- 1/2 tsp Salt
- 1/4 tsp Black pepper
Instructions:
- Preheat oven to 375 degrees F (190 degrees C).
- Cook rice according to package instruction. Set aside when done.
- Heat olive oil in a large skillet over medium heat. Add onions and garlic; cook until onions are transparent.
- Stir in tomatoes, cooked rice, basil, salt and pepper. Remove from heat and set aside.
- Wash the peppers and cut the tops off. Remove seeds.
- Stuff each pepper with the rice mixture, and arrange in a baking dish. Top with crumbled feta cheese.
- Cover with aluminum foil and bake in the preheated oven for 35-40 minutes, or until peppers are tender.
- Remove from oven and allow to cool for a few minutes before serving.
