Exotic Mediterranean Stuffed Bell Peppers

Ingredients:

  • 1 cup Arborio rice
  • 2 tbsp Olive oil
  • 4 Red bell peppers
  • 1 Onion, chopped
  • 2 Garlic cloves, minced
  • 1 Tomato, chopped
  • 1 tbsp Fresh basil, chopped
  • 1/2 cup Feta cheese, crumbled
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Cook rice according to package instruction. Set aside when done.
  3. Heat olive oil in a large skillet over medium heat. Add onions and garlic; cook until onions are transparent.
  4. Stir in tomatoes, cooked rice, basil, salt and pepper. Remove from heat and set aside.
  5. Wash the peppers and cut the tops off. Remove seeds.
  6. Stuff each pepper with the rice mixture, and arrange in a baking dish. Top with crumbled feta cheese.
  7. Cover with aluminum foil and bake in the preheated oven for 35-40 minutes, or until peppers are tender.
  8. Remove from oven and allow to cool for a few minutes before serving.
