
Exotic Mediterranean Shakshuka

Ingredients:
- 6 whole Eggs
- 2 whole Bell peppers
- 1 whole Onion
- 3 whole Garlic cloves
- 800 grams Chopped tomatoes
- 1 tsp Smoked paprika
- 1 tsp Ground cumin
- to taste bunch Fresh parsley
- 2 tbsp Olive oil
- 100 grams Fetta cheese
- to taste Salt and pepper
Instructions:
- Heat the olive oil in a large, deep frying pan or skillet over medium heat.
- Add the chopped onion, bell peppers, and garlic to the pan and sauté until softened.
- Mix in the spices - cumin and smoked paprika, and stir well to combine.
- Add chopped tomatoes. Simmer the mixture on a lower heat until the tomatoes reduce into a thick, chunky sauce.
- Make wells in the sauce and crack the eggs into each well. Cover the pan and cook until the eggs are set to your preference.
- Crumble Fetta cheese on top and sprinkle with fresh parsley. Season with salt and pepper to taste.
- Serve immediately, hot and straight from the pan with a side of flat bread or pita for a perfect Mediterranean snack.
