Exotic Mediterranean Shakshuka

Ingredients:

  • 6 whole Eggs
  • 2 whole Bell peppers
  • 1 whole Onion
  • 3 whole Garlic cloves
  • 800 grams Chopped tomatoes
  • 1 tsp Smoked paprika
  • 1 tsp Ground cumin
  • to taste bunch Fresh parsley
  • 2 tbsp Olive oil
  • 100 grams Fetta cheese
  • to taste Salt and pepper

Instructions:

  1. Heat the olive oil in a large, deep frying pan or skillet over medium heat.
  2. Add the chopped onion, bell peppers, and garlic to the pan and sauté until softened.
  3. Mix in the spices - cumin and smoked paprika, and stir well to combine.
  4. Add chopped tomatoes. Simmer the mixture on a lower heat until the tomatoes reduce into a thick, chunky sauce.
  5. Make wells in the sauce and crack the eggs into each well. Cover the pan and cook until the eggs are set to your preference.
  6. Crumble Fetta cheese on top and sprinkle with fresh parsley. Season with salt and pepper to taste.
  7. Serve immediately, hot and straight from the pan with a side of flat bread or pita for a perfect Mediterranean snack.
