Exotic Mediterranean Seafood Tapas

Ingredients:

  • 2 tablespoon Extra virgin olive oil
  • 3 cloves Garlic
  • 1 teaspoon Red chilli flakes
  • 500 grams Fresh squid
  • 12 Large prawns
  • 500 grams Mussels
  • 1 cup White wine
  • to taste Salt
  • 1 bunch Fresh parsley
  • 1 Lemon

Instructions:

  1. Heat the extra virgin olive oil in a large pan over medium heat. Add the garlic and red chilli flakes and sauté until fragrant.
  2. Add the squid and prawns to the pan and sauté until they change color. Remove them from the pan and set aside.
  3. Add the mussels to the pan, pour in the white wine and cover the pan. Cook until the mussels open, then remove them from the pan and add them to the squid and prawns.
  4. Return the seafood to the pan and toss to combine. Season with salt and cook for a further 2-3 minutes.
  5. Serve the seafood tapas in bowls, topped with chopped fresh parsley and a squeeze of lemon juice.
