Exotic Mediterranean Rice Stuffed Bell Peppers

Ingredients:

  • 1 cup Long Grain Rice
  • 4 units Yellow Bell Peppers
  • 2 tablespoons Olive Oil
  • 1 cup Chopped Onion
  • 2 cloves Garlic
  • 1 can Diced Tomatoes
  • 1/2 cup Feta Cheese
  • 1/3 cup Pitted Kalamata Olives
  • 2 tablespoons Fresh Cilantro, chopped
  • 1 teaspoon Cumin
  • 1/4 teaspoon Cayenne Pepper
  • To taste Salt
  • To taste Black Pepper

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Place the rice in a saucepan with 2 cups of water and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes.
  3. While the rice is cooking, cut off the tops of the bell peppers and hollow out the insides, removing any seeds.
  4. Heat olive oil in a skillet over medium heat. Add onions and garlic, and cook until softened.
  5. Mix in cooked rice, diced tomatoes, feta cheese, olives, cilantro, cumin and cayenne. Season with salt and pepper.
  6. Spoon the rice mixture into the hollowed-out peppers. Place the stuffed peppers in a baking dish.
  7. Bake for 45 minutes in the preheated oven, or until lightly browned.
  8. Serve your Exotic Mediterranean Rice Stuffed Bell Peppers hot.
