Exotic Mediterranean Rice Stuffed Bell Peppers

Ingredients:
- 1 cup Long Grain Rice
- 4 units Yellow Bell Peppers
- 2 tablespoons Olive Oil
- 1 cup Chopped Onion
- 2 cloves Garlic
- 1 can Diced Tomatoes
- 1/2 cup Feta Cheese
- 1/3 cup Pitted Kalamata Olives
- 2 tablespoons Fresh Cilantro, chopped
- 1 teaspoon Cumin
- 1/4 teaspoon Cayenne Pepper
- To taste Salt
- To taste Black Pepper
Instructions:
- Preheat your oven to 375°F (190°C).
- Place the rice in a saucepan with 2 cups of water and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes.
- While the rice is cooking, cut off the tops of the bell peppers and hollow out the insides, removing any seeds.
- Heat olive oil in a skillet over medium heat. Add onions and garlic, and cook until softened.
- Mix in cooked rice, diced tomatoes, feta cheese, olives, cilantro, cumin and cayenne. Season with salt and pepper.
- Spoon the rice mixture into the hollowed-out peppers. Place the stuffed peppers in a baking dish.
- Bake for 45 minutes in the preheated oven, or until lightly browned.
