Exotic Mediterranean Pork Tenderloin

Ingredients:
- 1.5 pounds Pork tenderloin
- 2 tablespoons Extra virgin olive oil
- 2 minced Garlic cloves
- 2 sprigs Fresh rosemary
- 1 sprig Fresh thyme
- 1/2 cup Red wine
- 6 halved Figs
- 1/2 cup Kalamata olives
- 1/2 cup Feta cheese
- to taste Salt and pepper
Instructions:
- Preheat your oven to 400 degrees Fahrenheit, and prepare a baking dish by greasing it with a tablespoon of olive oil.
- Season the pork tenderloin with salt, pepper, and minced garlic. Place it in the prepped baking dish, and arrange the rosemary and thyme sprigs on top.
- In a small saucepan, simmer the figs with red wine until they become soft and the wine is reduced by half.
- Pour the fig and wine mixture over the pork tenderloin, and arrange the halved figs and kalamata olives around it.
- Bake the pork in the preheated oven for about one hour, or until the internal temperature reads 145 degrees Fahrenheit.
- Let the pork rest for a few minutes before slicing. Sprinkle feta cheese over the top, and serve with a side of couscous, if desired.
