Exotic Mediterranean Pork Tenderloin

Ingredients:

  • 1.5 pounds Pork tenderloin
  • 2 tablespoons Extra virgin olive oil
  • 2 minced Garlic cloves
  • 2 sprigs Fresh rosemary
  • 1 sprig Fresh thyme
  • 1/2 cup Red wine
  • 6 halved Figs
  • 1/2 cup Kalamata olives
  • 1/2 cup Feta cheese
  • to taste Salt and pepper

Instructions:

  1. Preheat your oven to 400 degrees Fahrenheit, and prepare a baking dish by greasing it with a tablespoon of olive oil.
  2. Season the pork tenderloin with salt, pepper, and minced garlic. Place it in the prepped baking dish, and arrange the rosemary and thyme sprigs on top.
  3. In a small saucepan, simmer the figs with red wine until they become soft and the wine is reduced by half.
  4. Pour the fig and wine mixture over the pork tenderloin, and arrange the halved figs and kalamata olives around it.
  5. Bake the pork in the preheated oven for about one hour, or until the internal temperature reads 145 degrees Fahrenheit.
  6. Let the pork rest for a few minutes before slicing. Sprinkle feta cheese over the top, and serve with a side of couscous, if desired.
