Exotic Mediterranean Pasta Salad

Ingredients:

  • 2 cups Penne Pasta
  • 1 tablespoon Extra Virgin Olive Oil
  • 2 Pieces Garlic Cloves
  • 0.5 Pieces Red Onion
  • 0.5 cups Sun-Dried Tomatoes
  • 0.5 cups Black Olives
  • 0.75 cups Crumbled Feta Cheese
  • 1 tablespoon Chopped Fresh Basil
  • 1 tablespoon Chopped Fresh Parsley
  • 1 tablespoon Chopped Fresh Mint
  • 1 teaspoon Lemon Zest
  • To taste Ground Pepper
  • To taste Salt

Instructions:

  1. Boil some water in a large pot with a hefty pinch of salt and then add the pasta. Cook until al dente.
  2. Heat the olive oil in a skillet over medium heat. Add the chopped garlic and red onion. Sauté until the onion is soft.
  3. Chop the sun-dried tomatoes, black olives, and herbs.
  4. Drain the pasta and transfer it to a large bowl. Add the garlic, onion, tomatoes, black olives, crumbled feta, chopped herbs, lemon zest and drizzle some more olive oil.
  5. Season with salt and ground pepper to taste. Toss until well mixed.
  6. Let the salad rest for 5-10 minutes so the flavors can meld together. It can be served warm or cold as a delicious snack.
