
Exotic Mediterranean Pasta Salad

Ingredients:
- 2 cups Penne Pasta
- 1 tablespoon Extra Virgin Olive Oil
- 2 Pieces Garlic Cloves
- 0.5 Pieces Red Onion
- 0.5 cups Sun-Dried Tomatoes
- 0.5 cups Black Olives
- 0.75 cups Crumbled Feta Cheese
- 1 tablespoon Chopped Fresh Basil
- 1 tablespoon Chopped Fresh Parsley
- 1 tablespoon Chopped Fresh Mint
- 1 teaspoon Lemon Zest
- To taste Ground Pepper
- To taste Salt
Instructions:
- Boil some water in a large pot with a hefty pinch of salt and then add the pasta. Cook until al dente.
- Heat the olive oil in a skillet over medium heat. Add the chopped garlic and red onion. Sauté until the onion is soft.
- Chop the sun-dried tomatoes, black olives, and herbs.
- Drain the pasta and transfer it to a large bowl. Add the garlic, onion, tomatoes, black olives, crumbled feta, chopped herbs, lemon zest and drizzle some more olive oil.
- Season with salt and ground pepper to taste. Toss until well mixed.
- Let the salad rest for 5-10 minutes so the flavors can meld together. It can be served warm or cold as a delicious snack.
