Exotic Mediterranean Pasta

Ingredients:

  • 500 grams Pasta
  • 3 tablespoons Olive oil
  • 3 cloves Fresh garlic
  • 1 teaspoon Red chili flakes
  • 1 large Zucchini
  • 1 large Yellow bell pepper
  • 200 grams Cherry tomatoes
  • 1/2 cup Kalamata olives
  • from 1 lemon Lemon zest
  • 200 grams Feta cheese
  • a handful Fresh basil

Instructions:

  1. 1. Cook the pasta in a large pot of salted water as per the package instructions, until al dente. Drain and set aside, saving some of the pasta water.
  2. 2. While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the garlic and chili flakes, cook until fragrant.
  3. 3. Add the zucchini and bell pepper, sauté until they start to soften. Add the cherry tomatoes and cook for a couple more minutes until they start to burst.
  4. 4. Add the cooked pasta to the pan along with the olives, and mix everything well. Add a bit of the reserved pasta water if necessary to loosen the mixture.
  5. 5. Off the heat, mix in the feta cheese and lemon zest. Adjust the seasoning with salt and pepper.
  6. 6. Serve hot, garnished with fresh basil leaves.
