
Exotic Mediterranean Pasta

Ingredients:
- 500 grams Pasta
- 3 tablespoons Olive oil
- 3 cloves Fresh garlic
- 1 teaspoon Red chili flakes
- 1 large Zucchini
- 1 large Yellow bell pepper
- 200 grams Cherry tomatoes
- 1/2 cup Kalamata olives
- from 1 lemon Lemon zest
- 200 grams Feta cheese
- a handful Fresh basil
Instructions:
- 1. Cook the pasta in a large pot of salted water as per the package instructions, until al dente. Drain and set aside, saving some of the pasta water.
- 2. While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the garlic and chili flakes, cook until fragrant.
- 3. Add the zucchini and bell pepper, sauté until they start to soften. Add the cherry tomatoes and cook for a couple more minutes until they start to burst.
- 4. Add the cooked pasta to the pan along with the olives, and mix everything well. Add a bit of the reserved pasta water if necessary to loosen the mixture.
- 5. Off the heat, mix in the feta cheese and lemon zest. Adjust the seasoning with salt and pepper.
- 6. Serve hot, garnished with fresh basil leaves.
