
Exotic Mediterranean Morning Pasta

Ingredients:
- 500 grams Spaghetti Pasta
- 3 tablespoons Olive oil
- 3 units Garlic cloves
- 1 teaspoon Chili flakes
- 200 grams Cherry tomatoes
- handful units Fresh basil leaves
- 4 units Eggs
- 150 grams Feta cheese
- to taste units Salt and pepper
Instructions:
- Begin by boiling a pot of salted water for your pasta, cook it according to package instructions until al dente, then drain and set aside.
- In a large pan, heat up the olive oil over medium heat, then add in the finely chopped garlic and chili flakes, sauté them until fragrant.
- Add in the cherry tomatoes to the pan, let them cook until they start to break down and release their juices, season with a pinch of salt and pepper.
- Crack the eggs into the pan creating wells between the tomatoes, then cover and let cook until the whites solidify but the yolks remain runny.
- Add the cooked pasta to the pan and toss it with the tomato and egg mixture, add a bit of pasta water if it becomes too dry.
- Crumble the feta cheese over the pasta, then sprinkle over the fresh basil leaves.
