Exotic Mediterranean Morning Pasta

Ingredients:

  • 500 grams Spaghetti Pasta
  • 3 tablespoons Olive oil
  • 3 units Garlic cloves
  • 1 teaspoon Chili flakes
  • 200 grams Cherry tomatoes
  • handful units Fresh basil leaves
  • 4 units Eggs
  • 150 grams Feta cheese
  • to taste units Salt and pepper

Instructions:

  1. Begin by boiling a pot of salted water for your pasta, cook it according to package instructions until al dente, then drain and set aside.
  2. In a large pan, heat up the olive oil over medium heat, then add in the finely chopped garlic and chili flakes, sauté them until fragrant.
  3. Add in the cherry tomatoes to the pan, let them cook until they start to break down and release their juices, season with a pinch of salt and pepper.
  4. Crack the eggs into the pan creating wells between the tomatoes, then cover and let cook until the whites solidify but the yolks remain runny.
  5. Add the cooked pasta to the pan and toss it with the tomato and egg mixture, add a bit of pasta water if it becomes too dry.
  6. Crumble the feta cheese over the pasta, then sprinkle over the fresh basil leaves.
  7. Give everything one last toss, then remove from heat and serve your Exotic Mediterranean Morning Pasta promptly. Enjoy.
