
Exotic Mediterranean Midnight Shakshuka

Ingredients:
- 4 whole Eggs
- 2 tablespoons Olive oil
- 1 large Onion
- 2 whole Garlic cloves
- 1 large Red bell pepper
- 1 teaspoon Ground cumin
- 1/2 teaspoon Cayenne pepper
- 1 can (14 oz) Canned tomatoes
- 1/2 cup Feta cheese
- 2 tablespoons Fresh parsley
- to taste Salt and pepper
Instructions:
- Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper, and sauté until soft, about 5 minutes.
- Add the minced garlic, cayenne pepper, and cumin. Cook for another minute, until fragrant.
- Add the canned tomatoes and their juice into the skillet. Stir to combine. Bring the mixture to a simmer.
- Create four small wells in the tomato sauce. Crack an egg into each well. Cover the skillet and let it simmer for about 10-12 minutes, until the eggs are cooked to your liking.
- Season with salt and pepper. Sprinkle the feta cheese and fresh parsley on top.
- Serve the shakshuka hot, right out of the skillet. Enjoy this exotic Mediterranean dish for your midnight cravings!
