Exotic Mediterranean Midnight Shakshuka

Ingredients:

  • 4 whole Eggs
  • 2 tablespoons Olive oil
  • 1 large Onion
  • 2 whole Garlic cloves
  • 1 large Red bell pepper
  • 1 teaspoon Ground cumin
  • 1/2 teaspoon Cayenne pepper
  • 1 can (14 oz) Canned tomatoes
  • 1/2 cup Feta cheese
  • 2 tablespoons Fresh parsley
  • to taste Salt and pepper

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper, and sauté until soft, about 5 minutes.
  2. Add the minced garlic, cayenne pepper, and cumin. Cook for another minute, until fragrant.
  3. Add the canned tomatoes and their juice into the skillet. Stir to combine. Bring the mixture to a simmer.
  4. Create four small wells in the tomato sauce. Crack an egg into each well. Cover the skillet and let it simmer for about 10-12 minutes, until the eggs are cooked to your liking.
  5. Season with salt and pepper. Sprinkle the feta cheese and fresh parsley on top.
  6. Serve the shakshuka hot, right out of the skillet. Enjoy this exotic Mediterranean dish for your midnight cravings!
