
Exotic Mediterranean Fruit Salad with Grilled Halloumi

Ingredients:
- 1/2 watermelon
- 1/2 cantaloupe
- 1/2 honeydew melon
- 1 cup purple grapes
- 200 grams halloumi cheese
- 2 tablespoons olive oil
- to taste balsamic reduction
- a handful fresh basil leaves
- a handful fresh mint leaves
Instructions:
- 1. Using a melon baller, scoop out balls from the watermelon, cantaloupe, and honeydew melon. Set aside.
- 2. Wash the grapes and set them aside.
- 3. Cut the halloumi cheese into thick slices.
- 4. Heat a grill pan on medium heat. Brush the pan with 1 tablespoon of olive oil.
- 5. Once hot, add the halloumi slices to the grill pan and let them cook until golden brown on both sides.
- 6. In a large salad bowl, combine the melon balls, grapes, and grilled halloumi.
- 7. Drizzle the salad with the remaining olive oil and the balsamic reduction.
- 8. Before serving, sprinkle the salad with fresh basil and mint leaves.
