Exotic Mediterranean Fish Tagine

Ingredients:

  • 4 pieces White fish fillets
  • 2 tablespoons Olive oil
  • 1 large Onion
  • 3 pieces Garlic cloves
  • 1 inch Fresh ginger
  • 2 teaspoons Moroccan spice mix (Ras el Hanout)
  • 1 large Tomato
  • 1 cup Fish stock
  • 1 teaspoon Honey
  • 1 piece Lemon
  • To taste Coriander
  • To taste Salt and pepper

Instructions:

  1. Cut the fish into pieces and marinate with salt, pepper, and a teaspoon of the Moroccan spice mix.
  2. Heat oil in a tagine or large heavy-based saucepan. Sauté the onion, garlic, and ginger until they soften.
  3. Add the rest of the Moroccan spice mix and stir for about a minute until the spices release their aroma.
  4. Chop the tomato and add it to the pan along with the fish stock and honey, bring it to a boil.
  5. Add the marinated fish to the pan, reduce the heat, and cover the pan. Simmer for about 15-20 minutes or until the fish is cooked through.
  6. Finally, add the juice of a lemon and sprinkle with coriander before serving.
