
Exotic Mediterranean Fish Tagine

Ingredients:
- 4 pieces White fish fillets
- 2 tablespoons Olive oil
- 1 large Onion
- 3 pieces Garlic cloves
- 1 inch Fresh ginger
- 2 teaspoons Moroccan spice mix (Ras el Hanout)
- 1 large Tomato
- 1 cup Fish stock
- 1 teaspoon Honey
- 1 piece Lemon
- To taste Coriander
- To taste Salt and pepper
Instructions:
- Cut the fish into pieces and marinate with salt, pepper, and a teaspoon of the Moroccan spice mix.
- Heat oil in a tagine or large heavy-based saucepan. Sauté the onion, garlic, and ginger until they soften.
- Add the rest of the Moroccan spice mix and stir for about a minute until the spices release their aroma.
- Chop the tomato and add it to the pan along with the fish stock and honey, bring it to a boil.
- Add the marinated fish to the pan, reduce the heat, and cover the pan. Simmer for about 15-20 minutes or until the fish is cooked through.
- Finally, add the juice of a lemon and sprinkle with coriander before serving.
