Exotic Mediterranean Fish Shakshuka

Ingredients:

  • 3 tablespoon Olive Oil
  • 4 pcs Fish fillets (like gilthead or European seabass)
  • 2 pcs Onions
  • 3 cloves Garlic
  • 2 pcs Bell Peppers
  • 5 pcs Tomatoes
  • 6 pcs Eggs
  • 100 grams Feta Cheese
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • to taste Salt
  • to taste Black Pepper
  • 1 bunch Parsley

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the fish fillets and cook until golden on each side. Remove the fish from the skillet and set aside.
  2. In the same skillet, add the chopped onions, garlic, and bell peppers. Cook until softened.
  3. Add the chopped tomatoes, paprika, cumin, salt, and pepper. Cook until the tomatoes are broken down and have released their juices.
  4. Reduce the heat and add the eggs to the skillet. Cover and let them cook until the whites are set but the yolks are still runny.
  5. Crumble the feta over the top and add the cooked fish fillets back to the skillet. Cover and let it all cook together for a few more minutes.
  6. Garnish with fresh parsley and serve the shakshuka directly from the skillet.
