Exotic Mediterranean Fish Kebabs

Ingredients:

  • 2 pcs White fish fillets
  • 2 tbsp Olive oil
  • 2 pcs Garlic cloves
  • 1/2 lemon Fresh lemon juice
  • 1 handful Fresh basil leaves
  • 6 pcs Cherry tomatoes
  • 1 pcs Bell peppers
  • A pinch Saffron threads
  • To taste Salt
  • To taste Black pepper

Instructions:

  1. Start by making the marinade. In a bowl, combine the olive oil, minced garlic, lemon juice, finely chopped basil leaves, a pinch of saffron, salt, and black pepper.
  2. Cut the fish fillets into large chunks and place them in the marinade. Mix well, making sure that each piece is coated, and let it rest for 15 minutes.
  3. Meanwhile, cut the bell peppers into large squares and halve the cherry tomatoes.
  4. Thread the fish, bell peppers, and cherry tomatoes alternately onto skewers.
  5. Heat the grill over medium-high heat. Grill the kebabs, basting them with the remaining marinade and turning them occasionally until the fish is cooked through and the vegetables are tender, about 10-15 minutes.
  6. Serve the kebabs hot with a squeeze of fresh lemon juice on top for an extra zing. Enjoy your exotic Mediterranean fish kebabs!
