
Exotic Mediterranean Fish Kebabs

Ingredients:
- 2 pcs White fish fillets
- 2 tbsp Olive oil
- 2 pcs Garlic cloves
- 1/2 lemon Fresh lemon juice
- 1 handful Fresh basil leaves
- 6 pcs Cherry tomatoes
- 1 pcs Bell peppers
- A pinch Saffron threads
- To taste Salt
- To taste Black pepper
Instructions:
- Start by making the marinade. In a bowl, combine the olive oil, minced garlic, lemon juice, finely chopped basil leaves, a pinch of saffron, salt, and black pepper.
- Cut the fish fillets into large chunks and place them in the marinade. Mix well, making sure that each piece is coated, and let it rest for 15 minutes.
- Meanwhile, cut the bell peppers into large squares and halve the cherry tomatoes.
- Thread the fish, bell peppers, and cherry tomatoes alternately onto skewers.
- Heat the grill over medium-high heat. Grill the kebabs, basting them with the remaining marinade and turning them occasionally until the fish is cooked through and the vegetables are tender, about 10-15 minutes.
