Exotic Mediterranean Egg Shakshuka

Ingredients:
- 2 tablespoons Extra-virgin olive oil
- 1 whole Onion
- 1 whole Red bell pepper
- 3 whole Garlic cloves
- 5 whole Tomatoes
- 1 teaspoon Ground cumin
- 1/4 teaspoon Cayenne pepper
- 6 whole Eggs
- 4 pieces Pita bread
Instructions:
- Heat olive oil in a large sauté pan on medium heat. Add the chopped bell pepper and onion and cook until they begin to soften.
- Add garlic to the pan and sauté for another minute.
- Add the tomatoes, cumin, and cayenne to the pan and stir well.
- Simmer to let the tomatoes break down into a chunky sauce, about 15-20 minutes. Add salt and pepper to taste.
- Gently crack the eggs, one at a time, directly over the tomato mixture, making sure to space them evenly over the sauce. The eggs will cook 'over easy' style on top of the tomato sauce.
- Cover the pan and let the mixture simmer for about 15 minutes, or until the eggs are cooked and the sauce has slightly reduced.
- Carefully dip a pita into the pan to soak up the sauce and place onto a plate. With a large spoon, scoop an egg and some sauce, placing over the pita. Repeat with remaining pitas.
