Exotic Mediterranean Egg Shakshuka

Ingredients:

  • 2 tablespoons Extra-virgin olive oil
  • 1 whole Onion
  • 1 whole Red bell pepper
  • 3 whole Garlic cloves
  • 5 whole Tomatoes
  • 1 teaspoon Ground cumin
  • 1/4 teaspoon Cayenne pepper
  • 6 whole Eggs
  • 4 pieces Pita bread

Instructions:

  1. Heat olive oil in a large sauté pan on medium heat. Add the chopped bell pepper and onion and cook until they begin to soften.
  2. Add garlic to the pan and sauté for another minute.
  3. Add the tomatoes, cumin, and cayenne to the pan and stir well.
  4. Simmer to let the tomatoes break down into a chunky sauce, about 15-20 minutes. Add salt and pepper to taste.
  5. Gently crack the eggs, one at a time, directly over the tomato mixture, making sure to space them evenly over the sauce. The eggs will cook 'over easy' style on top of the tomato sauce.
  6. Cover the pan and let the mixture simmer for about 15 minutes, or until the eggs are cooked and the sauce has slightly reduced.
  7. Carefully dip a pita into the pan to soak up the sauce and place onto a plate. With a large spoon, scoop an egg and some sauce, placing over the pita. Repeat with remaining pitas.
