Exotic Mediterranean Chicken

Ingredients:
- 4 pieces Chicken breasts
- 3 pieces Garlic cloves
- 2 sprigs Fresh rosemary
- 1 large piece Zucchini
- 0.5 cup Kalamata olives, pitted
- 2 tablespoons Lemon juice
- 3 tablespoons Extra virgin olive oil
- 1 cup Greek yogurt
- 3 tablespoons Mint leaves, chopped
- to taste Salt and Black Pepper
Instructions:
- Prepare a marinade by combining the minced garlic, chopped rosemary, lemon juice, olive oil, salt, and pepper in a large bowl. Add the chicken breasts and ensure they are well coated. Cover and refrigerate for at least 20 minutes.
- Preheat your oven to 375 degrees F (190 degrees C).
- Whilst oven is preheating, slice your zucchini into slender rounds.
- Arrange the chicken in a baking dish. Toss in the zucchini rounds and olives around the chicken. Pour the remaining marinade over everything.
- Bake the chicken and vegetables in the preheated oven for around 1 hour, or until the chicken juices run clear when cut.
- While the chicken is in the oven, prepare your Greek yogurt dip by combining the yogurt and mint leaves in a small bowl. Season with salt and pepper and stir until well mixed. Refrigerate until ready to serve.
- Remove the chicken from the oven and let it rest for a few minutes before serving. Serve the chicken on plates, garnished with some of the cooked olives and zucchini on the side. Serve the minted yogurt dip on the side for dipping.
