
Exotic Mediterranean Breakfast Rice Bowl

Ingredients:
- 1 cup Brown Rice
- 2 cups Water
- 2 tablespoons Olive Oil
- 2 cups Fresh Spinach
- 1/2 cup Cherry Tomatoes
- 1/4 cup Feta Cheese
- 1/4 cup Kalamata Olives
- 2 Eggs
- to taste Salt and Pepper
- 1 teaspoon Za'atar Spice Mix
Instructions:
- 1. Rinse the brown rice under cold water until the water runs clear. Drain well.
- 2. In a saucepan, combine the rice and water. Bring to a boil over high heat.
- 3. Once boiling, reduce the heat to low, cover, and simmer for about 25 minutes, or until the rice is tender and the water is absorbed. Fluff the rice with a fork and set aside.
- 4. Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the spinach and sauté until wilted.
- 5. Slice the cherry tomatoes in half and add them to the skillet. Continue to sauté until the tomatoes are softened.
- 6. Stir in the cooked rice, feta cheese, and kalamata olives. Season with salt, pepper, and za'atar. Mix well.
- 7. In a separate pan, fry the eggs to your liking.
- 8. Divide the rice mixture between two bowls. Top each with a fried egg and sprinkle with a bit more za'atar if desired. Serve immediately while hot.
