Exotic Mediterranean Breakfast Rice Bowl

Ingredients:

  • 1 cup Brown Rice
  • 2 cups Water
  • 2 tablespoons Olive Oil
  • 2 cups Fresh Spinach
  • 1/2 cup Cherry Tomatoes
  • 1/4 cup Feta Cheese
  • 1/4 cup Kalamata Olives
  • 2 Eggs
  • to taste Salt and Pepper
  • 1 teaspoon Za'atar Spice Mix

Instructions:

  1. 1. Rinse the brown rice under cold water until the water runs clear. Drain well.
  2. 2. In a saucepan, combine the rice and water. Bring to a boil over high heat.
  3. 3. Once boiling, reduce the heat to low, cover, and simmer for about 25 minutes, or until the rice is tender and the water is absorbed. Fluff the rice with a fork and set aside.
  4. 4. Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the spinach and sauté until wilted.
  5. 5. Slice the cherry tomatoes in half and add them to the skillet. Continue to sauté until the tomatoes are softened.
  6. 6. Stir in the cooked rice, feta cheese, and kalamata olives. Season with salt, pepper, and za'atar. Mix well.
  7. 7. In a separate pan, fry the eggs to your liking.
  8. 8. Divide the rice mixture between two bowls. Top each with a fried egg and sprinkle with a bit more za'atar if desired. Serve immediately while hot.
