
Exotic Mediterranean Beef Shakshuka

Ingredients:
- 2 tablespoons olive oil
- 500 grams beef
- 1 cup onion, chopped
- 1 cup green bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon cayenne pepper
- 1 can diced tomatoes
- 4 large eggs
- salt and black pepper to taste
- 1 tablespoon parsley, chopped
Instructions:
- In a large skillet or frying pan, heat olive oil over medium heat.
- Add the beef to the skillet and cook until it has browned. Transfer beef to a plate.
- In the same skillet, add onion and green bell pepper. Cook until onion is translucent.
- Add garlic, cumin, paprika and cayenne pepper. Stir until spices are well distributed.
- Mix in the can of diced tomatoes and return the cooked beef to the skillet. Stir and let it simmer for 20 minutes.
- Crack the eggs into the skillet over the mixture, cover and cook for additional 10 minutes or until eggs are cooked to your liking.
- Season the shakshuka with salt and pepper. Sprinkle with chopped parsley just before serving.
- Serve the shakshuka with slices of fresh crusty bread or pita.
