Exotic Mediterranean Beef Shakshuka

Ingredients:

  • 2 tablespoons olive oil
  • 500 grams beef
  • 1 cup onion, chopped
  • 1 cup green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • 1 can diced tomatoes
  • 4 large eggs
  • salt and black pepper to taste
  • 1 tablespoon parsley, chopped

Instructions:

  1. In a large skillet or frying pan, heat olive oil over medium heat.
  2. Add the beef to the skillet and cook until it has browned. Transfer beef to a plate.
  3. In the same skillet, add onion and green bell pepper. Cook until onion is translucent.
  4. Add garlic, cumin, paprika and cayenne pepper. Stir until spices are well distributed.
  5. Mix in the can of diced tomatoes and return the cooked beef to the skillet. Stir and let it simmer for 20 minutes.
  6. Crack the eggs into the skillet over the mixture, cover and cook for additional 10 minutes or until eggs are cooked to your liking.
  7. Season the shakshuka with salt and pepper. Sprinkle with chopped parsley just before serving.
  8. Serve the shakshuka with slices of fresh crusty bread or pita.
