Exotic Mediterranean Beef Pita

Ingredients:

  • 1.5 pound Beef sirloin
  • 4 Pita breads
  • 2 tbsp Olive oil
  • 2 Garlic cloves
  • 2 tbsp Red wine vinegar
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • 1/2 bunch Fresh mint leaves
  • 1 cup Greek yogurt
  • 1 Cucumber
  • 2 Tomatoes
  • 1 Red onion
  • to taste Salt
  • to taste Black pepper

Instructions:

  1. Slice beef sirloin into thin strips.
  2. In a large pan, heat the olive oil over medium heat, add the beef strips, garlic cloves and season with salt, pepper, cumin and paprika. Sauté until the beef is browned.
  3. Deglaze the pan with red wine vinegar, scraping off the browned bits from the pan. Allow to simmer until the vinegar is reduced.
  4. Chop cucumber, tomatoes, red onion, and mint leaves. Set these aside.
  5. In a small bowl, mix the Greek yogurt with chopped mint leaves and set aside.
  6. Warm the pita breads in an oven or a hot pan.
  7. Spread the yogurt-mint mixture on each pita bread, add the sautéed beef, chopped vegetables and wrap securely.
  8. Serve immediately for a fresh, exotic Mediterranean lunch.
