Exotic Mediterranean Beef Pita

Ingredients:
- 1.5 pound Beef sirloin
- 4 Pita breads
- 2 tbsp Olive oil
- 2 Garlic cloves
- 2 tbsp Red wine vinegar
- 1 tsp Ground cumin
- 1 tsp Paprika
- 1/2 bunch Fresh mint leaves
- 1 cup Greek yogurt
- 1 Cucumber
- 2 Tomatoes
- 1 Red onion
- to taste Salt
- to taste Black pepper
Instructions:
- Slice beef sirloin into thin strips.
- In a large pan, heat the olive oil over medium heat, add the beef strips, garlic cloves and season with salt, pepper, cumin and paprika. Sauté until the beef is browned.
- Deglaze the pan with red wine vinegar, scraping off the browned bits from the pan. Allow to simmer until the vinegar is reduced.
- Chop cucumber, tomatoes, red onion, and mint leaves. Set these aside.
- In a small bowl, mix the Greek yogurt with chopped mint leaves and set aside.
- Warm the pita breads in an oven or a hot pan.
- Spread the yogurt-mint mixture on each pita bread, add the sautéed beef, chopped vegetables and wrap securely.
- Serve immediately for a fresh, exotic Mediterranean lunch.
