Exotic Late Night Japanese Seafood Ramen

Ingredients:

  • 2 packs Ramen noodles
  • 1 cup Seafood mix (Includes shrimp, scallops, squid)
  • 2 tablespoons Soy sauce
  • 1 tablespoon Mirin
  • 4 cups Fish stock
  • 2 tablespoons Miso paste
  • 2 stalks Spring onions
  • 2 sheets Nori seaweed
  • 4 slices Kamaboko (Japanese fish cake)
  • 2 whole Boiled eggs
  • 2 teaspoons Sesame oil

Instructions:

  1. In a large pot, bring the fish stock to a rolling boil.
  2. Add miso paste, soy sauce and mirin to the boiling stock and mix well.
  3. In a separate pan, cook the seafood mix with a drizzle of sesame oil until nicely browned.
  4. Prepare the ramen noodles according to package instructions.
  5. Once the noodles are cooked, divide them between two bowls.
  6. Add the cooked seafood mix equally to each bowl.
  7. Pour the boiling miso-fish stock over the noodles and seafood.
  8. Finish each bowl with a sheet of nori seaweed, two slices of Kamaboko, a boiled egg cut in half and some chopped spring onions on top.
  9. Serve immediately while hot.
