
Exotic Late Night Japanese Seafood Ramen

Ingredients:
- 2 packs Ramen noodles
- 1 cup Seafood mix (Includes shrimp, scallops, squid)
- 2 tablespoons Soy sauce
- 1 tablespoon Mirin
- 4 cups Fish stock
- 2 tablespoons Miso paste
- 2 stalks Spring onions
- 2 sheets Nori seaweed
- 4 slices Kamaboko (Japanese fish cake)
- 2 whole Boiled eggs
- 2 teaspoons Sesame oil
Instructions:
- In a large pot, bring the fish stock to a rolling boil.
- Add miso paste, soy sauce and mirin to the boiling stock and mix well.
- In a separate pan, cook the seafood mix with a drizzle of sesame oil until nicely browned.
- Prepare the ramen noodles according to package instructions.
- Once the noodles are cooked, divide them between two bowls.
- Add the cooked seafood mix equally to each bowl.
- Pour the boiling miso-fish stock over the noodles and seafood.
- Finish each bowl with a sheet of nori seaweed, two slices of Kamaboko, a boiled egg cut in half and some chopped spring onions on top.
- Serve immediately while hot.
