Ingredients:
- 2 cups Mixed vegetables (bell peppers, zucchinis, eggplants)
- 3 tbsp Olive oil
- 1 tbsp Balsamic vinegar
- 1 loaf Italian bread
- 2 cloves Garlic
- 1 tsp Italian herbs (oregano, basil, rosemary)
- 1/2 tsp Sea salt
- 1/2 tsp Black pepper
Instructions:
- Prepare your mixed vegetables by cutting them into thin slices. This will allow them to grill evenly and quickly.
- In a bowl, mix together olive oil, balsamic vinegar, Italian herbs, sea salt, and black pepper.
- Toss the sliced vegetables in the olive oil mixture. Ensure all the slices are well coated.
- Heat your grill to medium-high heat. Place the vegetable slices on the grill. Cook for about 5-7 minutes on each side or until charred and tender.
- While the vegetables are grilling, slice your Italian bread and lightly toast them on the grill.
- Rub the toasted sides of the bread with the garlic cloves.
