Exotic Late-Night Grilled Vegetable Bruschetta

Ingredients:

  • 2 cups Mixed vegetables (bell peppers, zucchinis, eggplants)
  • 3 tbsp Olive oil
  • 1 tbsp Balsamic vinegar
  • 1 loaf Italian bread
  • 2 cloves Garlic
  • 1 tsp Italian herbs (oregano, basil, rosemary)
  • 1/2 tsp Sea salt
  • 1/2 tsp Black pepper

Instructions:

  1. Prepare your mixed vegetables by cutting them into thin slices. This will allow them to grill evenly and quickly.
  2. In a bowl, mix together olive oil, balsamic vinegar, Italian herbs, sea salt, and black pepper.
  3. Toss the sliced vegetables in the olive oil mixture. Ensure all the slices are well coated.
  4. Heat your grill to medium-high heat. Place the vegetable slices on the grill. Cook for about 5-7 minutes on each side or until charred and tender.
  5. While the vegetables are grilling, slice your Italian bread and lightly toast them on the grill.
  6. Rub the toasted sides of the bread with the garlic cloves.
  7. Once the vegetables are done grilling, place them on top of the garlic-rubbed bread slices.
