
Exotic Japanese Pasta Snack

Ingredients:
- 200 grams Fresh Udon Noodles
- 2 tablespoons Miso Paste
- 1 sheet Nori Seaweed
- 2 whole Spring Onions
- 5 whole Shiitake Mushrooms
- 1 tablespoons Soy Sauce
- 1 tablespoons Sesame Oil
- 100 grams Edamame Beans
Instructions:
- In a large pot, bring water to a boil. Add 200 grams of fresh udon noodles and cook for about 10 minutes, or according to the package instructions. Drain and set aside.
- Heat a tablespoon of sesame oil in a pan. Add sliced shiitake mushrooms and cook until softened.
- In the same pan, add 2 tablespoons of miso paste and a tablespoon of soy sauce. Mix well.
- Toss in the prepared udon noodles and stir until they are well coated with the miso-soy sauce mixture.
- Add cooked edamame beans into the pan and give everything a good stir. Continue to cook for another 2 minutes.
- Divide the noodles between two plates. Garnish with sliced spring onions and nori seaweed.
