
Exotic Japanese Fruit Sushi

Ingredients:
- 2 cups sushi rice
- 2 cups water
- 2 tsp rice vinegar
- 1 tbsp sugar
- 1 tsp salt
- 10 sheets nori sheets
- 1 cup strawberries
- 2 kiwis
- 1 mango
- 8 oz cream cheese
Instructions:
- Rinse the sushi rice until the water runs clear. Combine with water in a rice cooker and cook according to the manufacturer's instructions.
- In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until the sugar dissolves. Mix the vinegar mix into the cooked and slightly cooled rice.
- Place a sheet of nori on a bamboo sushi mat. Spread a thin layer of sushi rice on the nori, leaving a small margin at the top for sealing.
- Spread a layer of cream cheese onto the rice. Arrange slices of strawberry, kiwi, and mango in a line down the center of the rice.
- Roll the sushi tightly using the mat. Moisten the top margin of the nori with water to seal the roll. Slice the roll into bite-sized pieces with a sharp knife.
- Repeat with the remaining ingredients. Serve with a side of soy sauce or a sweet sauce of your choice.
