Exotic Japanese Fruit Sushi

Ingredients:

  • 2 cups sushi rice
  • 2 cups water
  • 2 tsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 10 sheets nori sheets
  • 1 cup strawberries
  • 2 kiwis
  • 1 mango
  • 8 oz cream cheese

Instructions:

  1. Rinse the sushi rice until the water runs clear. Combine with water in a rice cooker and cook according to the manufacturer's instructions.
  2. In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until the sugar dissolves. Mix the vinegar mix into the cooked and slightly cooled rice.
  3. Place a sheet of nori on a bamboo sushi mat. Spread a thin layer of sushi rice on the nori, leaving a small margin at the top for sealing.
  4. Spread a layer of cream cheese onto the rice. Arrange slices of strawberry, kiwi, and mango in a line down the center of the rice.
  5. Roll the sushi tightly using the mat. Moisten the top margin of the nori with water to seal the roll. Slice the roll into bite-sized pieces with a sharp knife.
  6. Repeat with the remaining ingredients. Serve with a side of soy sauce or a sweet sauce of your choice.
