
Exotic Japanese Chicken Teriyaki Bento

Ingredients:
- 4 pieces Boneless chicken thighs
- 1/3 cup Soy Sauce
- 1/3 cup Mirin
- 2 tablespoons Sugar
- 1 tablespoon Sesame seeds
- 2 cups Japanese short grain rice
- 1 pack Natto (fermented soybeans)
- 4 pieces Pickled plum (Umeboshi)
- 1 cup Seaweed salad
Instructions:
- Start by washing the Japanese rice under cold water until the water is clear, then cook according to the package instructions.
- In a mixing bowl, combine soy sauce, mirin, and sugar. Stir until sugar is completely dissolved.
- Place the chicken thighs in a pan over medium heat and cook until they are evenly browned.
- Pour the sauce mixture over the chicken and simmer until the sauce thickens. Turn the chicken occasionally to coat it with the sauce.
- Sprinkle the chicken with sesame seeds.
- In 4 Bento boxes, place a scoop of rice on one side. On the other side, arrange the chicken, natto, pickled plum, and seaweed salad.
