
Exotic Japanese Chicken Teriyaki

Ingredients:
- 4 pieces Chicken breast
- 1/2 cup Soy sauce
- 1/3 cup Mirin
- 1/4 cup Brown sugar
- 2 pieces Garlic clove
- 1 tablespoon Fresh ginger
- 4 pieces Spring onions
- 1 tablespoon Sesame seeds
- 1 cup Shiitake mushrooms
Instructions:
- Cut the chicken into bite-size pieces.
- In a bowl, mix the soy sauce, mirin, sugar, minced garlic and ginger together until well combined.
- Marinate chicken pieces in the sauce for at least 30 minutes, up to overnight.
- In a pan over medium heat, cook the chicken until golden brown.
- Pour in the remaining marinade and simmer until the sauce thickens and the chicken is well coated.
- Stir in the shiitake mushrooms and cook until they are soft.
- Garnish with sliced spring onions and sesame seeds before serving.
