Exotic Japanese Chicken Teriyaki

Ingredients:

  • 4 pieces Chicken breast
  • 1/2 cup Soy sauce
  • 1/3 cup Mirin
  • 1/4 cup Brown sugar
  • 2 pieces Garlic clove
  • 1 tablespoon Fresh ginger
  • 4 pieces Spring onions
  • 1 tablespoon Sesame seeds
  • 1 cup Shiitake mushrooms

Instructions:

  1. Cut the chicken into bite-size pieces.
  2. In a bowl, mix the soy sauce, mirin, sugar, minced garlic and ginger together until well combined.
  3. Marinate chicken pieces in the sauce for at least 30 minutes, up to overnight.
  4. In a pan over medium heat, cook the chicken until golden brown.
  5. Pour in the remaining marinade and simmer until the sauce thickens and the chicken is well coated.
  6. Stir in the shiitake mushrooms and cook until they are soft.
  7. Garnish with sliced spring onions and sesame seeds before serving.
