Exotic Italian Vegetable Bruschetta

Ingredients:

  • 1 loaf Italian bread
  • 2 Garlic clove
  • 0.5 cup Olive oil
  • 4 cups Assorted exotic vegetables (zucchini, bell peppers, eggplant, asparagus, artichoke hearts)
  • to taste Salt
  • to taste Black pepper
  • a bunch Fresh basil leaves
  • 1 cup Grated Parmesan cheese

Instructions:

  1. Preheat the oven to 180 degrees C (350F).
  2. Cut the Italian bread into slices and arrange on a baking tray.
  3. Crush garlic cloves and mix it with olive oil. Brush this mixture onto the bread slices.
  4. Chop the exotic vegetables into small pieces, mix them in a bowl with olive oil, salt, and pepper.
  5. Spread the vegetable mixture on the bread slices.
  6. Bake in the preheated oven for 10 minutes, or until bread is crispy.
  7. Take the tray out, garnish with fresh basil leaves and a generous amount of Parmesan cheese.
  8. Serve the Exotic Italian Vegetable Bruschetta warm as an exotic and savory snack.
