
Exotic Italian Vegetable Bruschetta

Ingredients:
- 1 loaf Italian bread
- 2 Garlic clove
- 0.5 cup Olive oil
- 4 cups Assorted exotic vegetables (zucchini, bell peppers, eggplant, asparagus, artichoke hearts)
- to taste Salt
- to taste Black pepper
- a bunch Fresh basil leaves
- 1 cup Grated Parmesan cheese
Instructions:
- Preheat the oven to 180 degrees C (350F).
- Cut the Italian bread into slices and arrange on a baking tray.
- Crush garlic cloves and mix it with olive oil. Brush this mixture onto the bread slices.
- Chop the exotic vegetables into small pieces, mix them in a bowl with olive oil, salt, and pepper.
- Spread the vegetable mixture on the bread slices.
- Bake in the preheated oven for 10 minutes, or until bread is crispy.
- Take the tray out, garnish with fresh basil leaves and a generous amount of Parmesan cheese.
- Serve the Exotic Italian Vegetable Bruschetta warm as an exotic and savory snack.
