Exotic Italian Stuffed Pork Tenderloin

Ingredients:
- 1 piece Pork tenderloin
- 1/2 cup Mascarpone cheese
- 1/3 cup Sun-dried tomatoes
- 1/4 cup Fresh basil leaves
- 4 slices Prosciutto
- 2 tablespoons Olive oil
- 1/2 cup White wine
- 2 cloves Garlic
- to taste Salt and pepper
Instructions:
- Preheat your oven to 375 degrees Fahrenheit.
- Slice the pork tenderloin down the center, making sure not to cut all the way through.
- Spread the mascarpone cheese inside the pork, followed by the sun-dried tomatoes and fresh basil leaves.
- Close the pork and wrap it tightly with the prosciutto slices. Secure the wrapped pork with toothpicks or tie it with kitchen string.
- In a skillet, heat the olive oil over medium-high heat. Add the pork and sear on all sides until browned.
- Remove the pork from the skillet and place it on a baking sheet. Bake in the oven for about 50 minutes, or until the pork is thoroughly cooked.
- While the pork is cooking, saute the garlic in the same skillet and add the white wine. Let it simmer until the wine has reduced and the sauce has thickened.
- Once the pork is done, allow it to rest for a few minutes before cutting into it. Serve the pork with the wine reduction sauce. Enjoy your exotic Italian stuffed pork tenderloin!
